Ingredients
– 4 chicken breasts
– 1 cup broccoli florets
– 1 cup carrot slices
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 0.5 teaspoon black pepper
– 1 lemon, juiced
– 0.5 cup grated cheese
Method
1. Preheat the oven to 200°C. Line a baking tray with baking paper.
2. Prepare the chicken by placing it on the tray. Drizzle with olive oil and sprinkle with salt, pepper, oregano, and minced garlic.
3. Arrange the broccoli and carrot slices around the chicken on the tray.
4. Squeeze fresh lemon juice over the chicken and vegetables.
5. Bake in the oven for 25-30 minutes or until the chicken is cooked through. Sprinkle grated cheese on top during the last 5 minutes.
