Ingredients
- 500g chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 400g canned diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
- 250g cooked rice
Method
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic, cooking until softened.
- Mix in the diced chicken and bell pepper, and cook until the chicken is browned.
- Pour in the diced tomatoes, oregano, paprika, salt, and pepper. Stir well.
- Simmer for about 15 minutes, then serve over cooked rice.
