Ingredients
– 2 tablespoons olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 zucchini, sliced
– 1 can (400g) diced tomatoes
– 1 teaspoon dried Italian herbs
– 1 cup vegetable broth
– 240g pasta of your choice
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and cook until soft, about 5 minutes.
3. Stir in the garlic, red bell pepper, and zucchini; cook for another 4 minutes.
4. Pour in the diced tomatoes, vegetable broth, and dried herbs; bring to a boil.
5. Add the pasta and cook according to package instructions. Season with salt and pepper as desired.
