Ingredients
500 g chicken breast, diced
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, sliced
1 zucchini, diced
1 cup cherry tomatoes, halved
1 tbsp Italian herbs
Salt and pepper to taste
Cooked rice, for serving
Method
Start by heating olive oil in a large pan over medium heat.
Add the chopped onion and sauté until translucent.
Stir in the garlic, bell pepper, and zucchini; cook for about 5 minutes.
Mix in the diced chicken and cook until it’s no longer pink.
Add cherry tomatoes, herbs, salt, and pepper, then serve with cooked rice.
