Delicious Warm Black Pudding And Apple Salad Recipe

Warm Black Pudding and Apple Salad

Ingredients
150 g black pudding
2 medium apples
1 tablespoon olive oil
1 tablespoon apple cider vinegar
50 g baby spinach
1 tablespoon chopped fresh parsley
Salt to taste
Pepper to taste
20 g walnuts
20 g feta cheese

Method
1. Slice black pudding into rounds. Cook in a frying pan over medium heat until crispy, about 4 minutes.
2. Core and slice the apples into wedges. Add them to the pan with the pudding for the last 2 minutes of cooking.
3. Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl.
4. Combine cooked pudding and apples with baby spinach in a large bowl. Pour the dressing over and toss gently.
5. Top with chopped parsley, walnuts, and crumbled feta before serving.
