Ingredients
200 g dried noodles
60 ml olive oil
80 g walnuts
3 tablespoons miso paste
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon sesame oil
2 spring onions, chopped
1 cup fresh spinach
Method
Cook the noodles according to package instructions. Drain and set aside.
Heat the olive oil in a frying pan over medium heat. Add the walnuts and cook for a few minutes until they are lightly toasted.
In a bowl, mix together the miso paste, rice vinegar, soy sauce, maple syrup, and sesame oil.
Pour the miso mixture into the pan with the toasted walnuts. Stir well to combine.
Add the cooked noodles, chopped spring onions, and spinach. Toss everything together until well mixed and heated through.
