Ingredients
– 400ml coconut milk
– 200ml condensed milk
– 200ml evaporated milk
– 1 cup sugar
– 1 cup corn flour
– 1 tablespoon vanilla extract
– 4 egg yolks
– 1 cup grated fresh coconut
– 1 teaspoon cinnamon
– 1 cup crushed almonds
Method
1. In a saucepan, combine the coconut milk, condensed milk, and evaporated milk. Heat over medium until warm.
2. In a separate bowl, mix the sugar and corn flour until there are no lumps.
3. Gradually stir the sugar mixture into the warm milk mixture. Cook on low heat, stirring constantly until thickened.
4. Remove the saucepan from the heat and let it cool slightly. Stir in the vanilla extract, egg yolks, grated coconut, and cinnamon. Mix well.
5. Pour the mixture into a baking dish, sprinkle crushed almonds on top, and refrigerate for a few hours until set.
