Delicious Veggie Rice Paper Rolls: A Healthy Recipe Guide

Ingredients

– 8 rice paper wrappers
– 1 cup shredded carrots
– 1 cup cucumber, sliced into thin strips
– 1 cup red bell pepper, sliced into thin strips
– 1 cup lettuce leaves, shredded
– 1 cup cooked vermicelli noodles
– ½ cup fresh mint leaves
– ½ cup fresh coriander leaves
– ½ cup peanut dipping sauce
– 1 tablespoon soy sauce

Method

1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10 seconds, or until soft.
2. Carefully lay the wrapper flat on a clean surface. Start layering the carrots, cucumber, bell pepper, lettuce, noodles, mint, and coriander down the center.
3. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top. Repeat with the remaining wrappers and filling.
4. Prepare the peanut dipping sauce by combining it with soy sauce in a small bowl.
5. Serve the rolls fresh with the dipping sauce on the side.
