Ingredients
– 1 can (400g) white beans, drained and rinsed
– 1 cup plain Greek yogurt
– ½ cup buffalo sauce
– 1 cup shredded cheese
– 1 cup corn, canned or frozen
– 1 small onion, diced
– 2 garlic cloves, minced
– 1 tbsp olive oil
– 1 tsp salt
– 1 tsp pepper
Method
1. Preheat the oven to 180°C.
2. Heat olive oil in a pan over medium heat. Sauté the diced onion and minced garlic until they are soft.
3. In a large bowl, mix the white beans, Greek yogurt, buffalo sauce, shredded cheese, corn, sautéed onion, and garlic. Stir until everything is combined.
4. Transfer the mixture to a baking dish. Spread it out evenly and sprinkle extra cheese on top if desired.
5. Bake for 20-25 minutes or until the dip is heated through and the cheese is bubbly.
