Ingredients
– 2 cups of quinoa
– 4 cups of vegetable broth
– 1 cup of diced pumpkin
– 1 cup of cooked chickpeas
– 1 red onion, chopped
– 2 cloves of garlic, minced
– 1 teaspoon of ground cumin
– 1 teaspoon of olive oil
– 1 cup of spinach
– Salt and pepper to taste
Method
1. Rinse the quinoa under cold water in a fine mesh sieve.
2. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking until soft.
3. Stir in the diced pumpkin, ground cumin, salt, and pepper. Cook for about 5 minutes, allowing the pumpkin to soften.
4. Pour in the vegetable broth and bring it to a boil. Add the rinsed quinoa and chickpeas, reducing the heat to low. Cover and let simmer for 15 minutes.
5. Remove from heat and mix in the spinach until wilted.
