Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can black beans (400 ml), drained and rinsed
– 1 can diced tomatoes (400 ml)
– 1 tablespoon taco seasoning
– 1 cup corn (frozen or canned)
– 1 cup bell pepper, chopped
– 1 cup shredded cheese
– Tortilla chips (for serving)
Method
1. Heat olive oil in a large skillet over medium heat.
2. Add chopped onion and garlic. Cook until the onion is soft, about 5 minutes.
3. Stir in black beans, diced tomatoes, taco seasoning, corn, and bell pepper. Mix well and cook for another 5-10 minutes.
4. Sprinkle shredded cheese on top and let it melt for a few minutes.
5. Serve the mixture with tortilla chips.
