Delicious Vegetarian Stuffed Red Peppers With Pesto & Ricotta

Ingredients

– 4 red bell peppers
– 1 cup ricotta cheese
– ½ cup pesto
– 1 cup cooked quinoa
– 1 cup diced tomatoes
– ½ cup grated cheese
– 1 teaspoon dried oregano
– 1 teaspoon salt
– ½ teaspoon black pepper
– Olive oil

Method

1. Preheat the oven to 190°C (375°F).
2. Slice the tops off the red bell peppers and remove the seeds. Place them in a baking dish.
3. In a bowl, mix ricotta cheese, pesto, cooked quinoa, diced tomatoes, dried oregano, salt, and black pepper until well combined.
4. Fill each pepper with the mixture and top with grated cheese. Drizzle a little olive oil over the peppers.
5. Bake for 25-30 minutes or until the peppers are tender and the cheese is golden.
