Ingredients
– 12 medium-sized button mushrooms
– 1 cup breadcrumbs
– 1 cup shredded cheese
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1/2 cup cooked spinach, chopped
– 1/4 cup fresh parsley, chopped
– 1/2 teaspoon salt
– 1/4 teaspoon pepper
– 2 tablespoons olive oil
Method
1. Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.
2. Remove the stems from the mushrooms and chop them finely.
3. Heat olive oil in a pan. Sauté the onion and garlic for about 3 minutes until they are soft.
4. Add the chopped mushroom stems, spinach, parsley, salt, and pepper. Cook for another 3 minutes.
5. Stir in breadcrumbs and cheese. Mix well. Fill each mushroom cap with the mixture. Bake for 20 minutes until golden brown.
