Vegetarian Pumpkin Sloppy Joes
Ingredients
– 450 g pumpkin, peeled and diced
– 1 tablespoon olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– 1 teaspoon ground cumin
– 400 g canned lentils, drained and rinsed
– 400 g diced tomatoes
– 2 tablespoons tomato paste
– 4 burger buns
Method
1. Heat the olive oil in a large pan over medium heat. Add the diced onion and cook for about 3 minutes until soft.
2. Stir in minced garlic and cook for another minute until fragrant.
3. Add pumpkin, smoked paprika, and ground cumin to the pan. Cook for 5 minutes, stirring occasionally.
4. Combine the lentils, diced tomatoes, and tomato paste. Bring the mixture to a simmer and cook for about 10 minutes until everything is heated through.
5. Toast the burger buns and fill each with the pumpkin mixture. Serve warm.
