Ingredients
– 200 g rice noodles
– 2 tablespoons vegetable oil
– 2 eggs
– 2 cups bean sprouts
– 1 cup carrots, shredded
– 4 green onions, chopped
– 1/4 cup roasted peanuts, crushed
– 3 tablespoons soy sauce
– 2 tablespoons lime juice
– Fresh coriander for garnish
Method
1. Start by cooking the rice noodles according to package instructions. Drain them and set aside.
2. Heat the vegetable oil in a large pan over medium heat. Add the beaten eggs, cooking until scrambled. Remove from the pan.
3. Add the carrots and green onions to the same pan. Stir-fry for a few minutes until they soften.
4. Mix in the cooked noodles, bean sprouts, soy sauce, and lime juice. Stir well to combine everything.
5. Top the dish with scrambled eggs and crushed peanuts. Garnish with fresh coriander before serving.
