Ingredients
– 200 g rice noodles
– 2 tablespoons vegetable oil
– 3 eggs
– 2 cups mixed vegetables (like carrot, bell pepper, and broccoli)
– 3 spring onions, chopped
– 2 cloves garlic, minced
– 4 tablespoons soy sauce
– 2 tablespoons peanut butter
– 1 tablespoon lime juice
– Chopped peanuts for garnish
Method
1. Cook the rice noodles according to the package instructions. Drain and set aside.
2. Heat the vegetable oil in a large pan over medium heat. Add garlic and sauté until fragrant.
3. Push garlic to one side of the pan, crack in the eggs, and scramble until cooked.
4. Stir in the mixed vegetables and cook until slightly tender. Then, add the noodles to the pan.
5. Pour in soy sauce, peanut butter, and lime juice, mixing everything together. Garnish with chopped peanuts and spring onions.
