Ingredients
– 1 cup quinoa
– 2 cups vegetable broth

– 1 zucchini, chopped
– 1 red bell pepper, chopped

– 1 can chickpeas, rinsed and drained
– 1 handful fresh spinach
Method
1. Begin by rinsing the quinoa under cold water for a minute.
2. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until soft.
3. Stir in minced garlic and cook for an additional minute until fragrant.
4. Mix in the zucchini, bell pepper, and oregano. Cook for about 5 minutes until the veggies are tender.
5. Add quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes. Add chickpeas and spinach, cooking until heated through.
