Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 carrot, diced
– 400 g canned diced tomatoes
– 400 g canned kidney beans, rinsed and drained
– 400 g canned black beans, rinsed and drained
– 2 teaspoons chili powder
– 1 teaspoon cumin
Method
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook for about 5 minutes until soft.
3. Stir in minced garlic, red bell pepper, and carrot, and sauté for another 5 minutes.
4. Pour in canned tomatoes and both types of beans. Add chili powder and cumin.
5. Let the mixture simmer for 20 minutes, stirring occasionally.
