Ingredients
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 bell pepper, diced
– 1 carrot, diced
– 2 cans (400 ml each) diced tomatoes
– 1 can (400 ml) kidney beans, rinsed and drained
– 1 can (400 ml) black beans, rinsed and drained
– 2 tablespoons chili powder
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and cook until it becomes soft, about 5 minutes.
3. Stir in the garlic, bell pepper, and carrot. Cook for another 5 minutes until everything is tender.
4. Pour in the diced tomatoes, kidney beans, black beans, chili powder, and season with salt and pepper.
5. Simmer the chili for 20 minutes, stirring occasionally.
