Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 400 g canned diced tomatoes
  • 400 g canned kidney beans, drained
  • 400 g canned black beans, drained
  • 500 ml vegetable broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Method

  1. Heat a large pot over medium heat. Add the chopped onion and garlic.
  2. Cook for around 5 minutes until the onion softens.
  3. Stir in the bell pepper and cook for another 2 minutes.
  4. Add the diced tomatoes, beans, vegetable broth, chili powder, and cumin. Mix well.
  5. Season with salt and pepper. Simmer for 20-30 minutes, stirring occasionally.
