Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 400 g canned diced tomatoes
- 400 g canned kidney beans, drained
- 400 g canned black beans, drained
- 500 ml vegetable broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Method
- Heat a large pot over medium heat. Add the chopped onion and garlic.
- Cook for around 5 minutes until the onion softens.
- Stir in the bell pepper and cook for another 2 minutes.
- Add the diced tomatoes, beans, vegetable broth, chili powder, and cumin. Mix well.
- Season with salt and pepper. Simmer for 20-30 minutes, stirring occasionally.
