Vegetable Side Dish Recipe
Ingredients
2 cups broccoli florets
1 cup diced carrots
1 red bell pepper, sliced
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt, to taste
Pepper, to taste
Method
1. Preheat the oven to 200°C.
2. In a large bowl, combine the broccoli, carrots, bell pepper, and cherry tomatoes.
3. Drizzle the olive oil over the vegetables and sprinkle with garlic powder, oregano, salt, and pepper.
4. Toss everything together until the veggies are well coated in the oil and spices.
5. Spread the mixture on a baking tray and roast for 20-25 minutes until tender and slightly charred.
