Delicious Vegetable Bake With Creamy Mashed Potato Topping

Ingredients

  • 1 cup frozen mixed vegetables
  • 2 medium potatoes
  • 1 small onion
  • 2 cloves garlic
  • 1 cup vegetable stock
  • 1 teaspoon dried herbs
  • ½ cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method

  1. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
  2. Peel and chop the potatoes into small cubes. Place them in a pot of boiling water and cook until soft, about 15 minutes.
  3. While potatoes are cooking, heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, cooking until soft.
  4. Add frozen mixed vegetables and vegetable stock to the pan. Stir in dried herbs, salt, and pepper. Simmer for 5 minutes.
  5. Drain the cooked potatoes and mash with milk. Spread the vegetable mixture in a baking dish, then top with the mashed potatoes. Bake for 20 minutes until golden.
