Ingredients
- 1 cup frozen mixed vegetables
- 2 medium potatoes
- 1 small onion
- 2 cloves garlic
- 1 cup vegetable stock
- 1 teaspoon dried herbs
- ½ cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Method
- Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
- Peel and chop the potatoes into small cubes. Place them in a pot of boiling water and cook until soft, about 15 minutes.
- While potatoes are cooking, heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, cooking until soft.
- Add frozen mixed vegetables and vegetable stock to the pan. Stir in dried herbs, salt, and pepper. Simmer for 5 minutes.
- Drain the cooked potatoes and mash with milk. Spread the vegetable mixture in a baking dish, then top with the mashed potatoes. Bake for 20 minutes until golden.
