Ingredients
– 2 medium zucchinis
– 1 small onion, chopped
– 2 cloves garlic, minced
– 400 g crushed tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon basil
– 1 cup spinach, chopped
– 1 cup nutritional yeast
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Method
1. Preheat the oven to 190°C (375°F).
2. Slice the zucchinis into thin strips using a knife or mandoline.
3. In a large pan, sauté the onion and garlic until they are soft.
4. Add the crushed tomatoes, oregano, basil, spinach, salt, and pepper to the pan. Stir well and let it cook for about 5 minutes.
5. Layer the zucchini strips and the tomato mixture in a baking dish. Sprinkle nutritional yeast on each layer. Bake for 30 minutes until golden and bubbly.
