Ingredients
– 1 medium zucchini, grated
– 1 ½ cups all-purpose flour
– 1 cup sugar
– ½ cup vegetable oil
– 1 cup non-dairy milk
– 1 teaspoon vanilla extract
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– ¼ teaspoon salt
– 200 g non-dairy cream cheese
Method
1. Preheat your oven to 180 degrees Celsius. Grease a cake pan with a bit of oil.
2. In a bowl, mix grated zucchini, sugar, oil, non-dairy milk, and vanilla extract until combined.
3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mix to the wet ingredients.
4. In another bowl, beat together the non-dairy cream cheese and a little sugar until smooth.
5. Pour half of the zucchini batter into the pan, add dollops of the cream cheese mixture, then add the remaining zucchini batter on top. Swirl with a knife for a marble effect. Bake for 40-45 minutes or until golden brown.
