Ingredients
- 1 can (400 ml) coconut cream
- 2 tablespoons icing sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 teaspoon lemon juice
- 1/4 teaspoon almond extract (optional)
Method
- Chill the can of coconut cream overnight in the fridge.
- Open the can without shaking it and scoop out the solid cream into a bowl.
- Use a mixer to beat the cream for about 2 minutes until it’s fluffy.
- Add the icing sugar, vanilla extract, salt, and lemon juice. Mix until well combined.
- If using, add almond extract. Whip everything together for another minute.
