Delicious Vegan Tres Leches Cake: A Dairy-Free Delight

Ingredients
1 cup plain flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup almond milk
1/3 cup vegetable oil
1 tablespoon vanilla extract
1 can coconut milk (400ml)
1 can evaporated coconut milk (400ml)
1 cup coconut cream

Method
1. Preheat the oven to 180 degrees Celsius. Grease a square baking dish.
2. In a large bowl, mix the flour, sugar, baking powder, and salt together.
3. Stir in the almond milk, vegetable oil, and vanilla extract. Beat until smooth.
4. Pour the batter into the prepared baking dish. Bake for 30-35 minutes until lightly golden and a toothpick comes out clean.
5. Once cooled, poke holes in the cake with a fork. Combine the coconut milk, evaporated coconut milk, and coconut cream. Pour this mixture over the cake to soak it.
