Ingredients
– 400 g fresh spinach
– 200 g silken tofu
– 1 cup dairy-free yogurt
– 1 tablespoon lemon juice
– 2 cloves garlic, minced
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon paprika
– 1/2 cup nutritional yeast
Method
1. Start by washing the spinach well. Drain it and place it in a large pot over medium heat.
2. Cook the spinach until it wilts, about 3-4 minutes. Remove it from the heat and let it cool.
3. Blend the silken tofu, dairy-free yogurt, lemon juice, minced garlic, onion powder, salt, black pepper, paprika, and nutritional yeast in a food processor until smooth.
4. Chop the cooled spinach and fold it into the blended mixture until well combined.
5. Serve the dip chilled with your favorite veggies or crackers.
