Ingredients
- 1 cup raw cashews (soaked in water for 4 hours)
- 1 cup spinach (fresh, chopped)
- 1/3 cup maple syrup
- 1/4 cup cocoa powder
- 1/4 cup coconut oil (melted)
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 cup Oreo cookies (crushed, for base)
- 1/4 cup coconut oil (for base)
Method
1. Start by soaking cashews in water for about 4 hours. This helps make them soft and easy to blend.
2. Crush the Oreo cookies and mix them with melted coconut oil until combined. Press this mixture into the bottom of a cake pan to form a base.
3. Blend soaked cashews, chopped spinach, maple syrup, cocoa powder, melted coconut oil, almond milk, vanilla extract, and lemon juice in a high-speed blender until smooth and creamy.
4. Pour the spinach and chocolate filling over the cookie base in the cake pan. Spread it evenly with a spatula.
5. Chill the cheesecake in the refrigerator for at least 4 hours, or until firm.
