Ingredients
– 1 cup quinoa
– 1 can (400g) pinto beans, drained and rinsed
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can (400g) diced tomatoes
– 2 tablespoons tomato paste
– 1 tablespoon maple syrup
– 1 tablespoon Worcestershire sauce
– 1 teaspoon smoked paprika
Method
1. Cook the quinoa according to the package instructions and set aside.
2. Heat olive oil in a large pan over medium heat. Add the chopped onion and cook until translucent.
3. Stir in garlic and cook for another minute.
4. Add the diced tomatoes, pinto beans, tomato paste, maple syrup, Worcestershire sauce, and smoked paprika to the pan. Mix well.
5. Let everything simmer for about 10 minutes. Serve the mixture over cooked quinoa or in a bun if desired.
