Ingredients
– 1 can pinto beans (400 g), drained
– 1 cup cooked quinoa
– 1 onion, diced
– 1 red bell pepper, diced
– 2 cloves garlic, minced
– 2 tbsp tomato paste
– 1 cup vegetable broth
– 2 tsp Worcestershire sauce
– 1 tsp smoked paprika
– Salt and pepper to taste
Method
1. Heat a large pan over medium heat. Add the diced onion and red bell pepper. Sauté until the onion turns translucent.
2. Stir in the minced garlic and cook for another minute until fragrant.
3. Add the drained pinto beans, cooked quinoa, tomato paste, vegetable broth, Worcestershire sauce, smoked paprika, salt, and pepper. Mix everything together.
4. Bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes, stirring occasionally.
5. Serve the mixture on buns or in a bowl, as preferred.
