Ingredients
– 1 cup of quinoa
– 2 cups of vegetable broth
– 1 can of black beans, rinsed and drained
– 1 cup of corn, frozen or canned
– 1 red bell pepper, diced
– 1 avocado, diced
– 1 lime, juiced
– 1 teaspoon of cumin
– 1 teaspoon of garlic powder
– Salt and pepper to taste
Method
1. Rinse the quinoa under cold water and drain it well.
2. In a saucepan, combine the quinoa and vegetable broth. Bring it to a boil over high heat.
3. Reduce the heat to low and cover. Cook for about 15 minutes until the quinoa is fluffy.
4. In a large bowl, mix the cooked quinoa, black beans, corn, red bell pepper, avocado, lime juice, cumin, garlic powder, salt, and pepper.
5. Toss everything together until well combined. Serve and enjoy!
