Ingredients
– 375 g pumpkin puree
– 150 g brown sugar
– 240 ml coconut milk
– 1 tsp vanilla extract
– 2 tsp pumpkin pie spice
– 1/2 tsp salt
– 1/4 cup maple syrup
– 1 tbsp cornstarch
– 1 premade pie crust
– 1/4 cup chopped nuts (optional)
Method
1. Preheat the oven to 180°C.
2. In a large bowl, mix pumpkin puree, brown sugar, coconut milk, and vanilla extract until smooth.
3. Stir in pumpkin pie spice, salt, maple syrup, and cornstarch until everything is combined well.
4. Pour the filling into the premade pie crust. Top with nuts if desired.
5. Bake for 45-50 minutes until the filling is set. Let it cool before serving.
