Ingredients
– 1 cup canned pumpkin
– 1 cup plant milk
– 1/3 cup maple syrup
– 1/3 cup vegetable oil
– 1 cup flour
– 1 cup sugar
– 1 tablespoon baking powder
– 1 teaspoon cinnamon
– 1/2 teaspoon salt
– 1/4 teaspoon nutmeg
Method
1. Preheat your oven to 180°C and line a muffin tray with paper liners.
2. In a bowl, mix together the pumpkin, milk, maple syrup, and oil.
3. In another bowl, whisk together the flour, sugar, baking powder, cinnamon, salt, and nutmeg.
4. Combine both mixtures until just blended. Do not overmix.
5. Pour the batter into the muffin trays and bake for 20-25 minutes, or until a toothpick comes out clean.
