Ingredients
– 1 cup (250 ml) pumpkin puree
– 1/2 cup (125 ml) maple syrup
– 1/4 cup (60 ml) unsweetened applesauce
– 1 cup (125 g) whole wheat flour
– 1/2 cup (65 g) rolled oats
– 1 teaspoon baking soda
– 1 teaspoon cinnamon
– 1/2 teaspoon nutmeg
– 1/4 teaspoon salt
– 1/2 cup (75 g) raisins or nuts (optional)
Method
1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
2. In a large bowl, mix together the pumpkin puree, maple syrup, and applesauce until smooth.
3. In a separate bowl, combine the whole wheat flour, rolled oats, baking soda, spices, and salt.
4. Gradually add the dry ingredients to the wet mixture and stir until just combined. If you’d like, fold in raisins or nuts.
5. Spoon the batter evenly into the muffin tin and bake for around 20-25 minutes or until a toothpick comes out clean.
