Ingredients
– 2 cups pumpkin puree

Method
1. Preheat the oven to 180°C and line a baking tray with parchment paper.
2. Mix pumpkin puree, brown sugar, vegetable oil, and almond milk in a large bowl until well combined.
3. In another bowl, whisk flour, baking powder, baking soda, cinnamon, and nutmeg together. Combine the dry ingredients with the wet ingredients until a dough forms.
4. Stir in chopped walnuts or pecans until evenly distributed.
5. Shape the dough into a log and place it on the baking tray. Bake for about 30 minutes, let it cool slightly, then slice it into pieces and bake again for 15 minutes.
