Ingredients
- 1 cup dried hominy
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 can (400g) diced tomatoes
- 1.5 liters vegetable broth
- 1 can black beans, drained
- Salt and pepper to taste
Method
- Rinse the hominy in cold water and soak it overnight or for at least 8 hours.
- In a large pot, heat olive oil over medium heat and sauté the chopped onion until it becomes soft.
- Add minced garlic, cumin, and oregano, cooking for another minute until fragrant.
- Stir in the diced tomatoes and vegetable broth, then add the soaked hominy and black beans.
- Bring everything to a boil, then lower the heat and let it simmer for about 30 minutes. Season with salt and pepper.
