Ingredients

  • 1 cup dried hominy
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 can (400g) diced tomatoes
  • 1.5 liters vegetable broth
  • 1 can black beans, drained
  • Salt and pepper to taste

Method

  1. Rinse the hominy in cold water and soak it overnight or for at least 8 hours.
  2. In a large pot, heat olive oil over medium heat and sauté the chopped onion until it becomes soft.
  3. Add minced garlic, cumin, and oregano, cooking for another minute until fragrant.
  4. Stir in the diced tomatoes and vegetable broth, then add the soaked hominy and black beans.
  5. Bring everything to a boil, then lower the heat and let it simmer for about 30 minutes. Season with salt and pepper.
