Ingredients
- 4 large potatoes
- 1 cup flour
- 1 teaspoon salt
- 2 tablespoons olive oil
- 150 ml vegetable broth
- 2 cups kale, chopped
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Pepper, to taste
- Grated nutritional yeast, for serving (optional)
Method
1. Boil the potatoes in a large pot until they are soft. This should take about 20 minutes.
2. Once cooked, drain the potatoes and let them cool slightly. After that, peel the potatoes and mash them until smooth.
3. Combine the mashed potatoes, flour, and salt in a bowl. Mix well until a dough forms. Aim for a smooth consistency without lumps.
4. Cut the dough into small pieces and roll each piece into a long rope. Cut the rope into small gnocchi pieces.
5. In a skillet, heat olive oil over medium heat. Add the garlic and kale. Sauté until kale is tender, then stir in vegetable broth and lemon juice. Season with pepper and simmer for a few minutes before serving over the gnocchi.
