Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 1 carrot, chopped
– 1 cup frozen peas
– 2 cups vegetable broth
– 2 tablespoons soy sauce
– 2 teaspoons dried thyme
– 1 teaspoon garlic powder
– 2 cups puff pastry
– Salt and pepper to taste
Method
1. Preheat the oven to 200°C.
2. Heat olive oil in a large pan over medium heat. Add onion and carrot, cooking for about 5 minutes until softened.
3. Stir in frozen peas, vegetable broth, soy sauce, thyme, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 10 minutes.
4. Spoon the mixture into a baking dish. Cover with puff pastry, sealing the edges with a fork.
5. Bake for 25 to 30 minutes until the pastry is golden and crispy.
