Vegan Pot Pie Casserole
Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, diced
1 cup green peas
3 cups vegetable broth
3 tablespoons cornstarch
1 teaspoon thyme
1 sheet puff pastry
Method
Heat the olive oil in a large pan over medium heat. Sauté the onion and garlic until soft. Add the carrots and celery, cooking for another 5 minutes. Stir in the green peas, vegetable broth, cornstarch, and thyme. Cook until the mixture thickens, then pour it into a baking dish and top with puff pastry. Bake at 200 degrees Celsius for 25 minutes or until the pastry is golden brown.
