Ingredients
- 1 cup of all-purpose flour

- 1 cup of plant-based milk
- 1/4 cup of vegetable oil

- 2 cups of diced peaches
- 1/4 cup of coconut yogurt
Method
- Preheat your oven to 180 degrees Celsius and prepare a muffin tin with liners.
- In a large bowl, mix together the flour, oats, brown sugar, baking powder, and salt.
- In a separate bowl, combine the plant-based milk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
- Divide the batter among the muffin tins and top each muffin with a dollop of coconut yogurt. Bake for 20-25 minutes or until golden.
