Ingredients

– 500 g all-purpose flour
– 150 ml almond milk
– 100 g sugar
– 100 g dark chocolate chips
– 1/4 cup dried fruits (like raisins or cranberries)
– 10 g instant dry yeast
– 1/4 cup vegan butter, melted
– 1/2 teaspoon salt
– 1 teaspoon vanilla extract
– Zest of 1 orange

Method

1. Warm the almond milk slightly and mix in the yeast and sugar. Let this sit for about 10 minutes until it foams.
2. In a large bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture, melted butter, vanilla, and orange zest.
3. Mix the ingredients together until a dough forms, then knead for about 10 minutes until smooth.
4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
5. After rising, fold in the chocolate chips and dried fruits. Shape into a loaf and place it in a loaf pan. Let it rise again for about 30 minutes. Preheat the oven to 180°C, bake for 30-35 minutes until golden brown.
