Ingredients
– 200 g mixed nuts, chopped
– 1 cup cooked quinoa
– 1 large carrot, grated
– 1 onion, diced
– 2 garlic cloves, minced
– 1 cup breadcrumbs
– 1 cup vegetable broth
– 1 tablespoon soy sauce
– 1 teaspoon dried thyme
– 1 teaspoon black pepper
Method
1. Preheat the oven to 180°C (350°F) and lightly grease a loaf pan.
2. In a large bowl, combine the nuts, cooked quinoa, grated carrot, diced onion, and minced garlic.
3. Stir in the breadcrumbs, vegetable broth, soy sauce, dried thyme, and black pepper until everything is well mixed.
4. Transfer the mixture to the prepared loaf pan, pressing it firmly.
5. Bake for 45-50 minutes, or until firm and golden on top.
