Ingredients
– 1 cup unsweetened almond milk
– 1 tablespoon apple cider vinegar
– 1 cup sugar
– 1/4 cup vegetable oil
– 1 teaspoon vanilla extract
– Zest of 1 lime
– 1 cup flour
– 1 cup wholemeal flour
– 1 teaspoon baking powder
– 1 cup blueberries
Method
1. Preheat the oven to 180°C and grease a loaf tin.
2. Combine almond milk and apple cider vinegar. Let it sit for a few minutes.
3. In a large bowl, mix together the sugar, oil, vanilla, and lime zest. Add the milk mixture.
4. Gradually stir in the flours and baking powder until combined. Gently fold in the blueberries.
5. Pour the batter into the prepared tin and bake for about 50-60 minutes or until a toothpick inserted comes out clean.
