Ingredients
– 1 cup (240 ml) lemon juice
– 1 cup (200 g) sugar
– 1/4 cup (60 ml) water
– 1/4 cup (60 g) cornstarch
– 1/4 cup (60 ml) almond milk
– 1/4 cup (60 g) coconut oil
– 1 teaspoon lemon zest
– 1 teaspoon vanilla extract
– A pinch of salt
Method
1. In a medium saucepan, combine lemon juice and sugar over medium heat.
2. Mix cornstarch with water in a separate bowl until smooth, then stir it into the saucepan.
3. Add almond milk, coconut oil, lemon zest, vanilla extract, and a pinch of salt to the pot.
4. Continuously stir the mixture until it thickens, around 5 to 7 minutes.
5. Once thickened, remove from heat and let it cool. Store in a jar in the fridge.
