Harira Soup Recipe
Ingredients
1 cup chopped onion
2 cloves garlic, minced
1 stick celery, diced
1 large carrot, diced
400 g canned chickpeas, rinsed and drained
400 g canned diced tomatoes
1 tsp ground cumin
1 tsp ground cinnamon
1.5 L vegetable broth
1 cup chopped fresh parsley
Method
Start by heating a large pot over medium heat. Add the onion, garlic, celery, and carrot. Sauté until the vegetables are soft, about 5 minutes.
Next, stir in the chickpeas, diced tomatoes, cumin, and cinnamon. Cook for a further 2 minutes, stirring regularly.
Pour in the vegetable broth while bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes.
Add the chopped parsley and simmer for an additional 5 minutes.
Serve hot in bowls and enjoy!
