Delicious Vegan Greek Pasta Salad Recipe For Healthy Eating

Ingredients

– 300 g pasta (your choice)
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 cup Kalamata olives, pitted and sliced
– 1/2 red onion, finely chopped
– 1/2 cup parsley, chopped
– 1/4 cup olive oil
– 2 tablespoons red wine vinegar
– 1 teaspoon dried oregano
– Salt and pepper to taste

Method

1. Cook the pasta according to the package instructions. Make sure it’s slightly firm, then drain and rinse it under cold water.
2. While the pasta cools, chop the cherry tomatoes, cucumber, red onion, and parsley.
3. In a large bowl, mix the cooled pasta with all the chopped vegetables and olives.
4. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
5. Pour the dressing over the pasta salad and toss everything together until well combined.
