Ingredients

– 300 g pasta
– 1 cup cherry tomatoes, halved

– 1 cup chickpeas, drained and rinsed

– 1/4 cup fresh parsley, chopped

Method

1. Cook the pasta according to the package instructions. Once done, drain and cool.
2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, chickpeas, red onion, olives, and parsley.
3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
4. Pour the dressing over the pasta salad and mix everything well.
