Ingredients
– 2 red peppers, sliced
– 1 yellow onion, sliced
– 1 tablespoon olive oil
– 1 tablespoon taco seasoning
– 400 g canned black beans, drained and rinsed
– 2 cups corn (fresh or frozen)
– 8 small tortillas
– 1 avocado, sliced
– Fresh cilantro, for garnish
– Lime wedges, for serving
Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the sliced peppers and onion. Cook for about 5 minutes until they are soft.
3. Sprinkle the taco seasoning over the veggies. Stir in the black beans and corn. Cook for another 5 minutes.
4. Warm the tortillas in a separate pan or microwave.
5. Serve the fajitas by placing the veggie mixture on the tortillas. Top with sliced avocado, cilantro, and squeeze lime over the top.
