– 300g pasta
– 250g mushrooms, sliced
– 1 onion, chopped
– 3 cloves garlic, minced
– 250ml vegetable broth
– 150ml plant-based cream
– 2 tablespoons olive oil
– 1 tablespoon soy sauce
– Salt, to taste
– Pepper, to taste
Method
1. Begin by cooking pasta according to the package instructions. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté for 3 minutes.
3. Include the sliced mushrooms and garlic to the pan. Cook until the mushrooms soften and release their juices, about 5 minutes.
4. Pour in the vegetable broth and soy sauce. Stir well, then let it simmer for another 5 minutes.
5. Mix in the plant-based cream. Add the cooked pasta and gently combine. Season with salt and pepper.
