Vegan Chili Recipe
Ingredients
– 1 tbsp olive oil
– 1 onion, diced
– 2 garlic cloves, minced
– 1 red bell pepper, diced
– 2 carrots, chopped
– 1 zucchini, diced
– 400 g canned diced tomatoes
– 400 g canned black beans, rinsed and drained
– 400 g canned kidney beans, rinsed and drained
– 2 tsp chili powder
Method
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until soft.
2. Stir in minced garlic, red bell pepper, and chopped carrots. Cook for another 5 minutes, mixing occasionally.
3. Add the diced zucchini, canned tomatoes, black beans, kidney beans, and chili powder. Stir well to combine everything.
4. Allow the chili to simmer on low heat for 20 minutes. Stir occasionally to prevent sticking.
5. Serve hot, and enjoy this delicious dish with bread or over rice.
